Observations: Objetivos do projeto: Microbiological food safety and shelf-life are both important concerns for poultry-meat production companies, being critical the implementation of alternative strategies, like copper-Cu and zinc-Zn, to control the spread of major foodborne pathogens and multidrug-resistant Enterobacteriaceae. The MAIN OBJECTIVE is to evaluate the impact of organic and inorganic Cu and Zn formulas currently used (or recently implemented) at farm level in the prevalence of colistin-resistant Enterobacteriaceae and Salmonella (and their serotypes of public health significance) in marketed poultry-meat during their shelf-life. Moreover, a specific objective is to study isolates relationships and susceptibility to both metals in case of colistin-resistant isolates or Salmonella detection. The STRATEGY includes field studies complemented by culturomic+phenotypic+molecular combination assays, which will allow a better designed strategies to prevent that bacteria with clinical relevance reach consumers through food-chain or the environment surrounding food-animal-production.
