Abstract (EN):
By different coupling between gas chromatography and FID, FPD, MS, and sniffing detection, a sulfur compound with a strawberry/sulphured odour was detected. This compound results from a reaction between furaneol and H2S, and it is characteristic of certain non Vitis vinifera wines, particularly those coming from hybrids of the first generation. It should he the 4-mercapto-2,5-dimethylthiophen-3-on.
