Abstract (EN): Tasters¿ performance evaluation is a difficult task in managing wine tasting panels. Traditionally, the performance is simply not measured. Recently the authors (Alvelos et. al., 1999) proposed procedures for (i) monitoring the individual decision process of the panellists and (ii) measuring their reproducibility and reliability on a daily basis. However, when it is required to assess and compare the global performance of the panellists over a large period of time (say, 6 months or a year), the referred procedures are not very helpful. The decision processes and the reliability of the panellists can change considerably over such periods of time making very difficult to judge and compare their global performance. A new method based on Receiver Operating Characteristic (ROC) curves was developed in order to evaluate the overall panellists¿ performance. It can be used whenever the tasting panel has to make a binary decision (for example to approve or not to approve a wine). This paper presents and illustrates the methodology developed. The example used is based on the rates assigned by the members of the Tasting Panel of the Port Wine Institute to the overall quality of Port samples. The period of time considered is about one year.
