Abstract (EN): The world is increasingly threatened by chronic diseases, related to lifestyle, stress, lack of physical exercise and excessive intake of high caloric diets. Almost all chronic diseases have in common an increased level of oxidative stress and inflammatory state. A wide variety of dietary plants including vegetables, fruits and beverages, like tea and wine, are rich in polyphenols. These compounds have attracted much attention with regard to human health as they seem to protect the establishment of several diseases with high prevalence in western countries, like cancer, cardiovascular disorders and diabetes. Here we will discuss general aspects of polyphenols classification, metabolism and bioavailability, their role as anti-oxidants and modulators of cell signalling, focusing especially in inflammation and angiogenic pathways. Recent reports suggesting beneficial effects of these compounds on metabolic syndrome will also be referred. © 2009 Springer Netherlands.
