The analytical control of sulphate in vinegar is important due to in many countries its content is regulated by law. For that reason in this work it has been developed, for the first time, a turbidimetric method for the determination of sulphate in vinegar, based on its precipitation when it reacts with barium chloride in acidic media. The use of a new conditioning solution to protect the formed dispersions has been proposed. The developed method showed a mean coefficient of variation of 1.4% and a mean percentage of spike recovery of 99.3% when applied to 22 vinegar samples. The limit of detection was 2.3 mg dm-3. This procedure resulted to be quicker, easier and more economic than the gravimetric method adopted as the reference technique. Comparison of variances and linear regression analysis of the results obtained were carried out to validate the proposed turbidimetric method.
