Abstract (EN): The consumption of anthocyanin-rich foods, as well as any other oral intake component, is associated with a series of events before a health effect may occur. They must pass through the oral cavity and gastrointestinal tract, undergo metabolism events, cross cellular barriers and eventually trigger a biological function. Hence, some important aspects that distinguish anthocyanins from other flavonoids will be revised and related to their bioavailability/metabolism journey. Then factors affecting anthocyanin bioavailability and that are capable of interfering with their bioactive effects will also be highlighted. An entirely new topic is also included, comprising the biological activity of anthocyanin metabolites. © 2021 John Wiley & Sons, Inc. All rights reserved.
