Objectives
To obtain the knowledge necessary to use methods to evaluate food intake and techniques for determining body composition. This subject is divided into two modules: Assessment of Food Intake and Body Composition
Program
Assessment of Food Intake - Methods of food frequency and diet history; validity; biological markers of food intake; transforming food into nutrients; using MicroDiet and Food processor; Epidemiology and nutritional epidemiology; how to run a study;types of studies; errors and confounders; Sampling and data analysis; Odds ratios, relative risks and respective confidence intervals; causal inference.
Body Composition - Anthropometry; Bioimpedance; Assessment of body composition using images and radiation; Use of DEXA for body composition; clinical relevance of methods; Practical demonstrations; discussion of methods and results .
