The ProCardo project aims to deepen knowledge regarding biochemical and molecular processes relating to the production of Serra da Estrela cheese. The production of this type of cheese depends on the use of two enzymes obtained from Cynara cardunculus flowers - Cardosin A and Cardosin B. cardosins are aspartic proteinases that break down the main protein present in milk - casein - and thus participate in the coagulation process. This project aims to
explore how climate change, particularly excessive heat and drought, can alter the expression and activity of cardosins in order to protect the cheese industry from climate change that are/could cause disturbances in Cardo plants. |
