Abstract (EN):
Fruit products adulterations are common and frequently practiced with water, sugar, fruits of the same variety or of another species of smaller commercial value, second extracts of fruits and colours. In this revision we present the advantages of phenolic profile evaluation of apple, orange, peach, pear, grape, pineapple and quince products and its contribution to the verification of its authenticity. The phenolic profile is used in the detection of adulterations like addition of fruits of smaller commercial value or second extracts of fruits and in the characterization/differentiation of these products.
