Analysis of the metabolic profiles of products of natural origin, aquatic or terrestrial (plants from in vivo and in vitro culture, mushrooms, insects, macroalgae and marine macroinvertebrates). The determined metabolites include phenolic compounds, organic acids, amino acids, alkaloids, volatile compounds, carotenoids, fatty acids and phytosterols.
Evaluation of the biological activities of the matrices above mentioned and of isolated compounds: antioxidant potential, acetylcholinesterase inhibition, anti-inflammatory activity and cytotoxicity.
