Resumo (PT): Entre finais do século XVIII e meados do século XX, realizaram-se sucessivos inquéritos sobre o salgado português (1790, 1869, 1936, 1954-60). Procurar-se-á aferir dos respectivos contextos de produção e apreciar a noção de inquérito, distinguindo as perspectivas de análise (grelhas), elaboradas ou ditadas pelos seus autores/mentores. Pretende-se, ainda, dissecar as potencialidades e as limitações dessas fontes, apurando a sua representatividade, no sentido de se avaliar da possibilidade de construção de séries de dados quantitativas e qualitativas verídicas e utilizáveis na elaboração de um estudo diacrónico e sincrónico de uma cartografia de salgados, dos respectivos aspectos técnicos (de cariz biológico e químico) e socio-económicos (sistemas de trabalho e produtividade).

Abstract (EN): From the late 18th century to the middle of the 20th, several enquiries were produced on the Portuguese salt (1790, 1869, 1936, 1954-60). The aim of this paper is to measure the historical context, as well as the enquiry itself, distinguishing the perspectives of the gridlines, established by their authors. Besides this, we intend to analyze the potentials and the limitations of these sources, evaluating their representativity in order to elaborate quantitative and qualitative database. The databases upon which one would be able to discuss a short and a long term salt cartography, the technical aspects (biological and chemical) and socio-economic traces (work systems and productivity).
