Resumo (PT): El objetivo del trabajo es conocer la concentración en que los diversos ácidos grasos aparecen en la leche ovina, a la vez que se realiza un estudio preliminar sobre la importancia de una serie de factores de variación, especialmente la raza de la oveja. El experimento se ha realizado utilizando datos de dos explotaciones comerciales. En una de ellas se recogieron muestras de leche de 26 ovejas de raza Assaf y 28 de raza Churra. En la otra se recogieron 25 muestras de leche de ovejas de raza Awassi, 28 de raza Churra y 19 de raza Lacaune. La extracción de la grasa y la derivatización de los ácidos grasos se ha realizado utilizado la metodología de Bligh and Dyer. Los ácidos grasos se analizaron mediante la técnica de cromatografia de gases en columna. El análisis estadístico de los datos se realizó mediante el SAS. Se ha estimado el porcentaje de varianza explicado por cada uno de los factores ambientales: ganadería, fecha de control, raza, edad e individuo. El factor raza no se muestra importante. Los cinco ácidos mayoritarios: palmítico, oleico, esteárico, mirístico y cáprico presentan concentraciones muy semejantes entre razas, como ocurre con el ganado vacuno y con el caprino. En cuanto a los CLA, en ningún caso se han encontrado diferencias significativas entre las razas. <br> <br> Mots clés: CLA. Abstract (EN): The aim of the work was to know the content of distinct fatty acids in sheep milk, as well as to perform a preliminary analysis on the importance of several variation factors, particularly sheep breed. The research was carried out using data from two commercial herds. In one herd milk samples were obtained from 26 and 28 Assaf and Churra ewes, respectively. In the other one, 25, 28 and 19 milk samples were collected from Awassi, Churra and Lacaune ewes, respectively. Fat extraction and fat acid analysis was performed using the methodology by Bligh and Dyer. The SAS program was used for the statistical analysis. Variance percentage was estimated for each of the environmental factors: herd, date of control, age and individual. Breed did not appear as an important factor. On the contrary, concentration of the five predominant fatty acids (palmitic, oleic, estearic, miristic and capric) showed similar concentrations in distinct breeds, like in cattle and goats.
