Abstract (EN):
Introduction: Social Centres aim to care essentially children and elderly. Those groups are considered in terms of food security, groups of risk for presenting increased risk to suffer from food born illness. The need and obligation to produce safe foods to this population pass for the implementation of an efficient food security system throughout the food production chain, expedition and distribution.Objective and Method: This work intended to implement a Food Security System based on HACCP methodology in an Elderly Centre using the EU-RAIN application of HACCP principles for Restaurants.Discussion: Several organizational and functional modifications were attained which enabled to reach the objectives defined in the implementation of HACCP system, except the validation and verification of the system. As a result final products were maintained under tighter control and, consequently, the safety and quality of the meals were improved. The implementation of HACCP System contributed to more efficient organization of the work, as well as the warranty of meals security.
