Abstract (EN):
Nanocarriers have become a challenging approach to design new materials with food and beverage applications. Nutraceuticals and bioactive compounds have an important role in the food/beverage industry. However, some of these compounds are very sensitive to ambient or industrial process conditions. The nutraceutical and bioactive compounds¿ loss during the processing or storage of foods is a very common occurrence. Normally, they are very volatile, react with other components, and are susceptible to heat and moisture. For all these reasons the delivery systems, namely, the micro- and nanoencapsulated systems, are important to protect and keep them in the best conditions.
