Abstract (EN): The gellified systems have a great impact in numerous areas. However, the scientific terminology used is ambiguous and often contradictory. These systems can be classified by different criteria. The most common classification distinguishes hydrogels (which have an aqueous phase) and oleogels (which have a organic solvent as the liquid continuous medium). The first ones are very widespread in many areas, including pharmaceutical and cosmetic industries. The good acceptability of these gels lies upon their refreshing and emollient properties among other characteristics. The gelling agents are very diverse and of different origins. In contrast, the oleogels only recently captured the attention of the scientific community. The organogelators were mostly discovered fortuitously. The experimental results of the last decade indicate the applicability of these systems in the pharmaceutical and cosmetic products.
