Resumo (PT): INTRODUÇÃO: O desperdício alimentar, entendido como os alimentos ainda próprios para consumo que são eliminados por ação ou omissão humana, tem-se revelado nos últimos anos um tema de interesse crescente. Em Portugal, cerca de 400000 crianças do 1.º ciclo do ensino básico consomem o almoço escolar diariamente. A pertinência do estudo do desperdício alimentar neste contexto prende-se não só com os efeitos deste fenómeno a nível ambiental, social e económico, mas particularmente com as consequências nutricionais. OBJETIVOS: o presente trabalho visa avaliar a dimensão do desperdício alimentar em refeitórios escolares de Jardins-de-infância e das Escolas Básicas do 1.º Ciclo do Município de Barcelos. METODOLOGIA: Esta investigação teve como alvo os estudantes de quatro escolas do Município de Barcelos, totalizando 293 alunos. Foi dividida em três fases, na primeira foi efetuada a quantificação do desperdício alimentar em contexto escolar, utilizando-se como procedimento a pesagem agregada seletiva. Na segunda etapa foi levada a cabo uma intervenção tendo em vista a sensibilização dos educadores, educandos e tarefeiras sobre o desperdício alimentar. Na terceira fase foi novamente efetuada a quantificação do desperdício alimentar, utilizando o mesmo procedimento da primeira fase. RESULTADOS: Verificou-se que da totalidade dos alimentos preparados nas escolas eram desperdiçados 11,5% antes da intervenção e 11,2% depois da intervenção. Nas instituições onde não houve sensibilização, a dimensão total de desperdício aumentou de 18,1% para 21,4%, enquanto que nas escolas onde se realizou uma ação de sensibilização a quantidade de resíduos decresceu de 32,4% para 28,2%. Observou-se ainda que a possibilidade das crianças saírem da cantina antes de consumirem a totalidade da refeição bem como a presença de um número diminuto de tarefeiras a acompanhar a refeição são fatores associados de altos níveis de desperdício alimentar no almoço escolar. CONCLUSÕES: Neste estudo foi possível notar uma diminuição na quantidade de alimentos desperdiçados o que parece indicar que a sensibilização sobre o desperdício alimentar poderá ser uma estratégia eficaz na redução do volume de desperdício nas escolas

Abstract (EN): INTRODUCTION: Food waste is the amount of food that remains proper for consumption but that is discarded by human action or omission. Due to the enormous amount of food wasted worldwide this is a subject of increasing interest in the last years. In Portugal about 400,000 children attend to the 1st grade of basic education and most of them have lunch at school daily. The relevance of evaluating food waste in this scenario includes its effects on the environment, society and economy but particularly focusing on its nutritional consequences on children¿s daily intake. OBJECTIVES: This study aimed to assess the extent of food waste in the school lunch provided for nursery children and 1st grade students in the Municipality of Barcelos, in Portugal. METHODOLOGY: Four schools totaling 293 students were involved in this research. This study was divided into three phases, the first was developed to quantify the food waste in schools, using the selective aggregate weighing. In the second phase an intervention was carried out to raise awareness of educators, students and canteen staff about food waste. And, in the third phase, the food waste was again quantified using the same procedure used in the first phase. RESULTS: It was found that from the total amount of food produced in schools, 11,5% was wasted in the first stage and 11,2% in the second one. In schools without an intervention, the total amount of waste increased from 18,1% to 21,4%, while in schools where a sensitization action was taken, the amount of waste decreased from 32,4% to 28,2%. It was observed that the possibility of children leaving the canteen before consuming the whole meal as well as the presence of a small number of tasks to accompany the meal are associated factors of high levels of food waste at school. CONCLUSIONS: In this study, the results show a decrease in the waste volume which may indicate that the awareness strategy about food waste may be used as potential strategy to reduce food waste in schools.
